Four Cheese Macaroni and Chicken

  • (2) 6ounce skinless chicken breast
  • 9 ounce dried macaroni noodles,
  • Pre workout or any other time use whole wheat or brown rice
  • Post work out use white noodles.
  • 3 ounce reduced fat sharp cheddar cheese 
  • 3 ounces reduced fat Monterey Jack cheese 
  • 1 1/2 ounce American cheese 
  • 1 1/2 ounce reduced fat mozzarella cheese 
  • 1 cup fat-free milk 
  • 1 teaspoon white pepper


Cooked chicken breast on an indoor or outdoor grill cut into small pieces and set aside. In a medium saucepan, bring 6 cups of water to a boil. Grate all cheeses and set aside.

Add macaroni to boiling water and reduce heat to medium. Cook about 10 minutes or prepackage direction. Poor water and macaroni into a strainer, and return macaroni to pan. Add milk grate cheeses, chopped chicken breast and pepper; cook over low heat, stirring constantly, for about four minutes or until cheese melts and chicken is warmed through.
