Grilled Tuna with Tomato and Mozzarella Salad

– 4  6-ounce (180-g) tuna steaks

- 8 ounces cherry tomatoes, chopped

- 2 ounces pitted black olives, chopped

- 1/2 small red onion, very thinly sliced

- 4 mozzarella balls, chopped

- 2 tablespoons coarsely chopped parsley

- 2 tablespoons extra virgin olive oil

- 2 tablespoons balsamic vinegar

- Salt and freshly ground pepper (optional)

 

Instructions:

Combine the tomatoes, olives, onion, mozzarella and parsley in a bowl.  Drizzle with 1 tablespoon of the oil and 2 tablespoons of balsamic vinegar.  Toss thoroughly to combine and set aside.

Preheat a grill on high.  Brush both sides of the tuna steaks with the remaining oil.  Season with salt and pepper if you like.  Grill the tuna until it is half cooked through, 2-3 minutes on each side (tuna can be slightly raw in the center).

Place the tuna on a serving plate either whole or sliced.  Top with the tomato and mozzarella mix and serve hot.  Enjoy!

    What Can I swap out instead of using 4 mozzarella balls?

    There may be several reasons why someone would want to substitute mozzarella in their meals. Mozzarella provides a unique taste and texture to foods, however in the big picture you can swap it out with realistically any other cheese that would tie into your taste buds nicely. You could choose a reduced fat cheese of sorts or tofu as a healthier alternative. The best part of making alterations to your meals is you control what crosses your lips… Enjoy!
